Recipe: Blueberry and Lemon Scones



I made super awesome blueberry and lemon scones.  The recipe is below - adapted from the fine folks at America's Test Kitchen.  Enjoy!

1 C Flour
3 Tbs Sugar
1 Tbs Baking Soda
Pinch of Salt
1/4 C Butter, chilled & cubed
1 1/4 C Frozen Blueberies
Zest from 2 Lemons
1 C Cream

Preheat oven to 450oF

Whisk together flour, sugar, baking soda, and salt.  Cut in butter until mix looks like bread crumbs.  Stir in Blueberries and lemon zest, then stir in cream.  Do not overmix.  Shape dough into palm sized balls, place on parchment lined baking sheet, and press until flattened (1 inch high).  These will look all cracked and messy at this point - that's ok! 

Bake 12-15 minutes, or until golden brown on top.  Cool for at least 10 minutes before serving.
